Wash the zucchini and pat it dry. Slice off the ends. Grate the zucchini. Arrange the grated zucchini on the trays of a dehydrator. Dehydrate for 24 hours at 135 °F, or until completely dry.
Turn off the dehydrator and allow the zucchini to cool. Place the dried zucchini shreds in the container of a cup blender and blend for about 1 minute until powdery. Wait a minute before opening the blender so the dust doesn't go everywhere. Keep in an airtight container with a moisture absorber, or use it in recipes immediately.
