Combine cottage cheese, rolled oats, eggs, baking powder, vanilla extract, and maple syrup in a blender. Blend until smooth.
Heat a griddle on the stove-top. Place ½ tsp of butter on the griddle to grease it. Pour about ¼ cup of the batter onto the hot griddle. Sprinkle with the optional blueberries or chocolate chips, and cook for two to three minutes on the first side, flipping when bubbles form around the edges. Cook on the second side until firm.
Serve immediately or freeze for later consumption.
