Gluten Free Almond Chip Balls

Ingredients
  

  • 1/2 cup blanched almond meal
  • 1/2 cup ghee or butter, at room temperature
  • 1/2 cup ChocZero Dark Baking Chips
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup organic quinoa flour or 1/2 cup white rice flour and 1/2 cup cassava flour
  • cup ChocZero Maple Syrup

Method
 

  1. Preheat the oven to 350 degrees F.
  2. Pulse the chocolate in a blender or food processor until finely ground.
  3. Place all ingredients in the bowl of a stand mixer fitted with the paddle attachment, and mix until thoroughly combined.
  4. Form the dough into 1-inch balls and place them 2 inches apart on a baking sheet. Bake for 15 minutes. Allow to cool completely before storing in an airtight container.
  5. The cookies will be tender, so less handling is better.
